This week was full of exciting bits and bobs, and plenty to be grateful for, but the most exciting, the most gratitude and sprinkle party in my kitchen inducing was this: we booked a holiday to the US of A! Come October Chris and I will be packing our bags and heading across the Pacific for three weeks. On our flight schedule: New York City, Philadelphia, Washington D.C., New Orleans, and Las Vegas! I am so excited, and yes, the countdown has started already! I wanna be a part of it, New York, New York! Before I get too unbearable and Frank Sinatra’s ghost comes to haunt me, here is my Nourished Life Gratitude List 2015 – Week Six:
Monday: Today the latest Yum. Gluten Free Magazine was published and this issue included three of my recipes! I was so grateful to work with the team at Yum. and I can’t wait to try out some of the other delicious recipes in this issue.
Tuesday: Tonight I stopped by the gym on the way home from work. I was only feeling like a short run and so I hopped on the rowing machine after a quick 5k. I was grateful to enjoy a different way of moving my body – I haven’t used the rowing machine in a long time! (and I was reminded of that the next day for sure…)
Wednesday: Tonight after work Chris and I took a walk down by the water in a new place. We rambled through the baseball fields and looked at all the fancy houses looking over the water. After our walk we took a drive through the high streets and dreamed about what we would buy with a limitless real estate budget. I was grateful for spending an evening dreaming with Chris.
Thursday: Today I had company on the way to work! A work friend of mine hurt her leg earlier in the week and needed a lift. Since we are practically neighbours, I was happy to take her with me. We talked about anything and everything. I was grateful to have someone to talk to on my commute, and so happy that I have wonderful people to work with.
Friday: Today Chris and I booked our tickets to America!! I am so grateful that we have the opportunity to travel, and create beautiful memories together. I am grateful that we are going to get out into the great big world and touch just a corner of something so different from our own lives.
Saturday: This morning I had a great session at the gym and in the afternoon Chris and I headed to Toowoomba to visit Nanny and have dinner with the family. Chris’s mum cooked a delicious eggplant and tomato dish (which I am definitely going to share soon) and Chris’s dad barbecued like a champion. Wine was poured, brownies were eaten, and a great time was had by all. I am grateful to be a part of Chris’s family.
Sunday: This morning after a long walk by the water (and a chocolate-flavoured green smoothie) Chris and I took a delicious lemon and poppy seed cake and went to visit my parents to celebrate their 35th wedding anniversary! I am grateful that my parents are such a wonderful example of how two people can be so different in some ways, and argue over the small things, but stand together through an ever-changing life and still love each other. Happy anniversary Mum and Dad. I love you both, and you are such an example to me of how to be kind, contributive, creative members of the world.

- Cherry season is quickly reaching its end so I celebrated their natural sweetness in my Cherry, Lentil, and Quinoa Salad.
- Weekend breakfast is a sacred time and my Zucchini, Carrot, and Walnut Pancakes celebrate a moment to pause at the end of a busy week.
